ok, this stuff is the bomb
i have been using dehydrated and freeze dried aromatics for awhile now in everyday cooking so the concept isnt new for me. i find the taste more concentrated and you dont waste produce because you left it for too long. got this on a whim and boy howdy, its some good stuff. ive used it in soups, broths, stews, braised meats and vegetables. its really good. just today used it with marinated chicken breasts (cilantro lime salad dressing, s/p, extra cilantro and olive oil) adding the vegetable blend took it up a notch making a really tasty sauce in the pan. cooked at 400 in oven for 40min.my only concern is how clean the vegetables are and the amt of pesticides, when you buy dried vegetables its a crap shoot what you get and theres no way to tell. id be first in line if they went organic. if i had my druthers id do my own but no space for it. this is the next best thing

Worth the price–IF you like parsley
After reading a bunch of negative reviews of this soup mix, I felt like I should issue a warning. THIS SOUP MIX CONTAINS DRIED PARSLEY. If you don’t like parsley, you won’t like this soup. I suspect that many of the negative reviews are from people who bought the soup mix without knowing what parsley tastes like, or people who were somehow surprised to learn that a soup mix containing parsley tastes like parsley. If you don’t know what parsley tastes like either, buy a small container from the spice aisle at the grocery store and taste it before you commit to buying a big jar of parsley-flavored soup. If you already know you don’t like parsley, there are lots of other dried vegetable soup mixes that don’t have it.On to the actual review…Yes, this stuff is expensive. But it might not be quite as expensive as you think, considering that the vegetables double in volume when rehydratedâso figure that a one-quart container will get you two quarts of cooked vegetables and a one-gallon jug will get you two gallons. Besides, theyâre non-perishable vegetables. They donât go bad if you forget about them for five minutes as fresh vegetables frequently do, they donât take up precious freezer space, and they take up less pantry space than an equivalent volume of canned vegetables and taste better too. On top of that, theyâre convenient. Vegetable soup without chopping any vegetables? Iâm in. (Raise your hand if you really love chopping onions. Yeahâ¦not seeing any hands.) And by the wayâ¦check the Harmony House website. Just saying.A couple of tips for using these:1. Always turn the container upside down and shake it a couple of times before measuring out your vegetables. Otherwise, the parsley tends to settle to the bottom and your last few scoops out of the container will be about half parsley.2. Rehydrate the vegetables in cold water for several hours before cooking them. You donât HAVE to do this, but the vegetables will cook more quickly and be more tender if you do. (But be aware that these vegetables are always faintly crunchy, even after being rehydrated and cooked. Donât expect them to take on the texture of canned vegetables, because they never do.) To rehydrate, just put two parts water to one part vegetables in a covered container and let it sit in the refrigerator all day or at room temperature for a few hours. If possible, stir them a couple of times while they rehydrate. (No, they wonât spoil if you leave them at room temperature for a few hours, any more than a fresh raw carrot or tomato would.)If youâre trying to keep a stock of non-perishable foods on hand, here are a couple of recipes that can be made entirely with non-perishable pantry ingredients.VEGGIE-NOODLE SOUP–1/2 cup vegetable soup mix, rehydrated in 1 cup water (i.e., about 1 cup rehydrated vegetables)–2 14-oz cans reduced-sodium chicken broth (for thinner soup) OR 1 can chicken broth plus about ½ cup water (for thicker soup)–Seasonings to taste (I use basil, oregano, and minced garlic, sprinkled in until the soup smells good)–1 cup dry elbow macaroni or other pasta–Optional: 1-2 tbsp spinach powderCombine the vegetables, broth, and seasonings in a medium saucepan. Bring to a boil, then reduce heat and simmer for 15-20 minutes. Add the macaroni and simmer another 8-10 minutes until vegetables and macaroni are tender. If using spinach powder, add immediately before serving. Makes about two bowls of soup.LENTIL-VEGETABLE STEW–1 cup dry lentils–2 14-oz cans reduced-sodium chicken broth–1 14-oz can tomato sauce–1 ½ cups vegetable soup mix, rehydrated in 3 cups water (i.e., about 3 cups vegetables)–Seasonings to taste (I use basil, oregano, and minced garlic, sprinkled in until the soup smells good)Combine the lentils, broth, and tomato sauce in a large soup pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes. Add the seasonings and vegetables and simmer for another 15-20 minutes until lentils and vegetables are tender. Makes 4-5 bowls of soup.Lots of variations are possible with either of these recipes. For example, you can use vegetable broth for a completely vegetarian meal; add additional vegetables such as spinach (not in powder form, that is) or corn; dress them up with chopped cooked meat (good way to use up a little bit of leftover chicken or ham); or add rice, noodles, or barley to the lentil-vegetable stew.Anyway, if you can stomach the price of this soup mix, buy some. Your stomach will be glad you did.

Nice product, Very Versatile
I like to make my own soups and dips. I own a dehydrator and often dry my own veggies for those uses but honestly, it takes a LOT of fresh veggies and herbs to make the amount of a mix you get with this product! So I feel that it is a good value at $12.95.I like the fact that this product is pure vegetable and herb. No fillers, No MSG, no weird preservatives I can’t pronounce. A silica preserving packet is included in the container. The caloric content is 58 calories per 1/4 cup dry product. 0 fat and cholesterol and only 49 mg of sodium per serving. Ingredients as listed in order on the label: Dehydrated carrots, Onion, tomatoes, peas, celery, green bell peppers, green beans and parsley.This makes a nice soup base with water but I prefer to use chicken or vegetable broth. I also like to reconstitute the mix and add it to whipped cream cheese or greek yogurt for a nice dip. I also reconstitute and add it to scrambled eggs! It is great added to your meatloaf or hamburger mixtures too. Some uses do call for it to be rehydrated but there are other uses that benefit from the crunchiness of the dehydrated form. Put some in your coffee grinder (I have one that is used exclusively for herb and spice grinding) for a powdery version. If you have a large pepper mill you can put it in there and grind a nice veggie seasoning on anything as you would with pepper! There are many uses for this product and I am enjoying getting creative with it.I recommend this vegetable “soup” mix. I wish they would rename it Vegetable “EVERYTHING” Mix.

Such a great idea for dorm room food!
Ok, I did a search on Amazon for vegetarian instant soup mix to send to my college vegetarian daughter and thank goodness this popped up! I sent her these and the dried shiitake mushrooms and she absolutely loves them! She puts these veggies in all kinds of things and it makes it SO easy for her t use in her simple dorm room setup. Definitely worth the cost since you don’t use that much for each serving and it’s lasted her over a month so far. It’s hard to gauge by the weight since they are very light dried veggies so I couldn’t tell if it was worth it or not. She uses it in her ramen (she can’t use the seasoning packets since they’re not vegetarian) and a little Italian seasoning and it turns it into a complete meal! She puts a little of the mushrooms and veggies in with plain pasta that she cooks in her Breville water/tea kettle and can make soup too when she was feeling under the weather and it was so much better than instant soup mix packets you get. She puts some of both in instant mashed potatoes and even with plain noodles. I’ll definitely keep buying these and sending to her on prime. So happy I accidentally found this searching through on Amazon.

The vegetables are cut very small but once hydrated they are the right size for soups and stews. On first sight they appear expensive but in use they are not because you use less than more chunky cut vegetables and more is packed (tightly) into the jar. Good value. The taste is just as fresh vegetables. I shall buy again.
